Prosciutto wrapped Asparagus with Fried Egg

Ingredients
  • Fresh asparagus spears
  • Prosciutto
  • Bread (your favourite)
  • 1 egg
  • Butter
Optional add ons
  • Pea shoots
  • Feta or parmesan
  • Mingle Hill hot sauce 
Instructions
  1. Cook the asparagus
    Heat a pan over medium. Add asparagus and fry for a couple minutes per side until lightly crisped.
    Add about 1 tbsp water and cover with a lid to steam.
    Remove once tender but still firm, not soggy.
  2. Start the toast
    Put your bread down to toast for about 2 minutes. You’ll finish it later.
  3. Wrap and crisp
    Wrap the cooked asparagus in prosciutto.
    Return to the pan and fry quickly on both sides until the prosciutto crisps.
  4. Fry the egg
    At the same time, crack your egg into the pan.
    Cook sunny side up or over easy so the yolk stays runny.
  5. Finish the toast
    Toast your bread for another 2 minutes until golden.
    Butter it while warm.
  6. Assemble
    Place the prosciutto wrapped asparagus on the toast.
    Top with the fried egg.
  7. Finish (don’t skip this part)
    Add pea shoots, a sprinkle of feta or parmesan, and a drizzle of Mingle Hill hot sauce.
